The Cleveland SK2345100 Braising Pan RTD Temperature Sensor measures the change in temperature inside cooking surface by tracking the variation in resistance caused by heat exposure. It operates by transforming this resistance change into signals that are read by the control system of the unit and able to track the temperature better. This RTD sensor is placed in the heating system of the braising pan, so that it is constantly in the same location to provide the same feedback to the temperature-control capabilities of the equipment.
